A master of the ‘New Italian Style’, Chef Alfredo’s prestigious restaurant ll Dolce Stil Novo is regarded as one of the finest dining experiences in Italy and won him a coveted Michelin star. The gifted chef was born in 1968 in Turin and discovered his love for cooking at just 13 years of age. Early in his extraordinary career, Chef Alfredo was named by L’Espresso Guide as Italy’s “Best Young Chef”. He has presented his highly-accomplished cuisine at Spain’s “Lo Mejor de la Gastronomia Congreso” (“The Best of Gastronomy Congress”) and served as Director of the Kitchens at the Turin 2006 Winter Olympic Games. In 2007 and 2008, he also starred as a celebrity chef on the TV show “Iron Chef”. Beyond Italy, Chef Alfredo oversees an Italian restaurant and bakery Café Torino in Mexico City.
Chef Alfredo is renowned for creating exciting personal interpretations of classic Italian dishes. Chef Alfredo’s special à la carte menu will be available for lunch and dinner at Rossini’s from January 24 – 25. Highlights will include appetizers of warm fresh ricotta cheese and purple ingredients, and roasted lobster tail with cannellini beans. There will also be “the vegetable soup” Alfredo Russo, risotto with buffalo mozzarella, anchovies, capers and lemon, “burnt” rack lamb à la Milanese with marinated Jerusalem artichokes, and more.
At the “ll Dolce Stil Novo Wine Dinner by Chef Alfredo Russo” on Saturday January 26, guests will enjoy a 7-course menu of intriguing dishes paired with carefully chosen wines. Signature dishes will include the egg with tomato, fresh basil and pecorino cheese, and veal tartare with black truffle and hazelnuts, and butternut squash pearls with leek soup and Amaretti. The menu will also feature tender veal cheek with red wine reduction with speck and red cabbage, and raviolone with crab and broccoli, a dish specially created as tribute to his friend, Sheraton Grande Sukhumvit’s Executive Chef Gaetano Palumbo. The memorable evening will end with Chef Alfredo’s take on the Florentine dessert zuccotto with coffee granita, Chantilly cream and chocolate, followed by coffee or tea and sweet treats.
