The dinner marks the 26th edition of Benvenuto Brunello, a much-anticipated preview of Tuscany’s newly released red wines. At the special evening, wine lovers will be welcomed to Rossini’s with a glass of sparkling Ferrari Maximum Brut and Chef Gaetano’s enticing canapés.
Seated in the restaurant’s recently refurbished enchanting Tuscan villa setting, guests will enjoy an appetizer of Sicilian red prawn carpaccio with lemon curd and mullet roe accompanied by the fresh and floral Verdicchio dei Castelli di Jesi Le Vaglie, Stefano Antonucci 2016. The second course will be fava beans with Hokkaido scallop and spigaroli lard paired with Brunello di Montalcino, Musico, DOCG 2013, a bright garnet colored wine with an intense perfume of aromatic wood, berries, vanilla and jam which is dry, robust and harmonious on the palate. Chef Gaetano’s will also delight diners with carnaroli rice with green spinach, pear and pecorino fossa cheese matched with Brunello di Montalcino, Cortonesi, DOCG 2013, and slow cooked suckling pig shoulder with green asparagus, rhubarb and onion complemented by Brunello di Montalcino, Poggio San Polo, DOCG 2013. Highlights will include slow cooked Wagyu beef short rib with smoked potato purée and mulberry caviarto enjoy with Brunello di Montalcino, Pian delle Querci, DOCG 2013, and an intriguing dessert of white asparagus ice cream with black truffle and pollen. The dinner of gourmet Italian cuisine at Rossini’s will end with coffee, tea and sweet treats.
