Chef Hervé of Brasserie 9 Crafts French Dishes for VIVIN Grocery

VIVIN Grocery is thrilled to announce the latest installment of its Grocerant Takeover menu series, featuring the renowned Chef Hervé Frerard from “Brasserie 9.” With a career spanning over thirty years across Europe, Asia, and beyond, Chef Hervé brings his extensive expertise and flair to VIVIN Grocery. Throughout July 2024, Chef Hervé will showcase his exceptional talent by transforming VIVIN Grocery’s Thai-organic, artisanal, and natural ingredients into 3 exquisite French-style dishes. A starter, a main, and a dessert that best reflects French flair and local product.

This menu follows the highly successful June 2024 menu curated by Chefs Amerigo Tito Sesti and Yoan Martin from the upcoming “Electric Sheep” eatery, which featured creative Italian dishes like organic carrot gnocchi and tiramisu with Thai organic coffee. Chef Hervé’s French touch promises to elevate the Grocerant Takeover experience at both VIVIN Grocery Asok and Thonglor locations.This month’s collaboration with Chef Hervé Frerard also coincides with French National Day on the 14th of July, which VIVIN Grocery will celebrate throughout the month with special dishes and French-themed events. Highlights include THE BIG FROMAGE Comedy Night and MOVIE & DINNER Night, featuring screenings of an eclectic mix of French.

Following the success of previous takeovers, including the memorable Meet the Artisan “Khao Soi Duck Confit” with Chef Nooror Somany Steppe of Blue Elephant, VIVIN Grocery continues to push culinary boundaries. By inviting renowned chefs, including those from Michelin-rated establishments, to create unique, seasonal menus, VIVIN Grocery offers an unparalleled dining experience. Chef Ferran Tadeo’s Thai-Spanish-inspired “Tom Yum Gazpacho” from the first official Grocerant Takeover, featuring VIVIN Grocery’s organic tomatoes and local Thai spices, remains a mainstay on the menu.

Chef Hervé’s Special Menu will include:

Onion Soup with Goat Cheese
A rich, deep, and comforting French classic, made with organic onions that are slow-cooked for five hours and continuously stirred until umami perfection. This exquisite soup is complemented with toasty bread and tangy Buchette goat cheese from Chiang Mai. The sweetness of caramelized onions melds with the savory depth of Herve’s special broth recipe. Dip the goat cheese-topped bread into the soup and savor the incredible, melt-in-your-mouth sensation that combines tangy, sweet, and savory flavors in every bite.

Classic Flank Steak with Wine Marchand Sauce
Indulge in a perfectly cooked Thai-Charolais flank steak, seared, tender, and juicy, served with a robust wine Marchand sauce. This dish features locally sourced beef, cooked to perfection and paired with a sauce made from a reduction of GranMonte Durif wine (GI Certified wine of Khoa Yai) and VIVIN’s aromatic herbs and spices.

Crêpes Suzette with Mango & Mango Sorbet
End your meal on a sweet note with this French dessert reimagined with a tropical twist. Delicate crêpes are flambéed in a luscious orange sauce, then topped with fresh mango slices and a scoop of refreshing mango sorbet, offering a delightful combination of warm and cold, sweet and tangy.
