Chef Jimmy (Mr Chamlong Pewthaisong) is a star here.  His cooking career began in a family restaurant and continued through 5-star restaurants and hotels around the world.  Now firmly part of the Bangkok gourmet food scene, Jimmy shares his passion for food with a team of 35 to create the kind of melt-in-your mouth fragrant-spice Thai cuisine created for maximum flavour.

Chef Jimmy has been with the Hotel Indigo since its opening in 2015.  His signature style combines food crafting with authentic Thai flavours and melt-in-your-mouth cuisine with original menus and pallete creativity.

His 12 signature dishes range from Som Tum-Spicy Green Papaya Salad,

featuring dried shrimps, peanuts, Vietnamese silky sausage, boiled egg, prawns, pork crackling and fermented noodles to Pad Kra Pao, a dish of wok-fried pork, chicken, or beef, melded with garlic, chili, and hot basil leaves.

Unmissable for Hotel Indigo Bangkok regulars is Moo Klook Foon, a full-flavoured spicy snack of deep-fried pork, roasted wild rice and chili powders dusted with lime served on lettuce. Another is Chef Jimmy’s Young Rice Pudding with coconut milk.  Its origins are in the kitchens of the Royal Palace.  This wicked desert is a meld of rice flour, palm sugar, pandan juice, lime water and homemade coconut cream.

Chef Jimmy creations can be found at the Char Bangkok venues, whose cooking style is elemental, featuring few if no garnishes, and highlights one or two ingredients at a time and one core cooking concept.

To experience the best of Chef Jimmy, Hotel Indigo Bangkok Wireless Road provides Thai cooking classes to suit different guest interests.  The Hotel Indigo can select a dish or Thai dessert for the class or the guest can select the menu they want.

Breakfast at the hotel includes a la carte order of fresh savoury and sweet items including Thai vegetarian food and Indian food as well as a cereal bar, bread, salad, fruits and drinks from the buffet line.

A Thai Afternoon Tea Set is available from 2.30 pm to 4.30 pm daily.  Two choices are available at THB 580++ per set, and at THB 680++ per set.  Here, unlimited drinks are served for two persons, with a selection of premium teas and coffee.
