Khao By Four Seasons Presents An “Un-Fig-Getable” Afternoon At Four Seasons Resort Chiang Mai

Four Seasons Resort Chiang Mai celebrates spring with a seasonal afternoon tea menu featuring fresh figs. Sourced from a local farm that is less than 45 minutes from the Resort, the quality of produce elevates the menu that has been meticulously curated by Pastry Chef Yanisa Wiagnon.

“Figs are considered superfoods by some because their overall nutritional value is quite commendable – they are believed to have the highest mineral and fibre content of all common fruits, nuts and vegetables,” says Yanisa, who has been working together with the Resort’s in-house naturopath Sudha Nair to create a afternoon tea experience that explores the balance of living well and eating healthy.

“We wanted to present a menu that not only reflects seasonal produce that is farmed sustainably, but also one that complements a healthy lifestyle,” says Yanisa. In addition to the figs, there are several ingredients that are sourced locally including honey from the Supha Bee Farm, while the small-batch fermented sweet rice and sourdough bread provides the right balance in taste and texture.

The menu is a blend of innovative dishes as well as classics that make an afternoon tea truly memorable. Guests can expect sweet and salty fig toasts, fig honey crumble, pork fennel and fig sausage rolls, highlighted by fig scones with clotted cream and homemade fig jam. General Manager Anthony Gill’s father, who is renowned for his scone-making skills across the UK, made a guest appearance to share his trade secrets with the kitchen team. “We’d like to believe our scones are now the best in Chiang Mai,” smiles Yanisa.

Overlooking the verdant rice paddies, the afternoon tea experience at Khao by Four Seasons is highlighted by the presentation in a traditional tu kab khao, inspired by a local food storage cupboard. “Before refrigeration, Thais stored our food in these cupboards to avoid contamination. We wanted to bring this rural experience to our restaurant to give our guests a true flavour of the local life,” says Young Rha, Director of Food and Beverage.

The experience at the deck of Khao by Four Seasons is highlighted by the farmer’s parade that takes place at 5:00 pm every evening, signaling the end of another day of work for the team at the rice paddies.
