VIVIN Grocery purveyors and producers of fine, local Thai, artisanal, natural and organic groceries located at Ekamai Complex, reopen their gourmet market dine-in restaurant with a new and limited edition version of their locally-famed fluffy omelette, the VIVIN Grocery Chorizo en Manteca Fluffy Omelette.
To celebrate their reopening since the Government relaxed in-dining restrictions this September 2021, the VIVIN Grocery team, from the 20th September 2021 will offer a limited edition fluffy omelette recipe which incorporates a new cold cut, “Chorizo en Manteca”. “Chorizo en Manteca” literally translates to Chorizo in Lard or Butter. The chorizos are dried for a few days before being immersed in their own pork fat (saindoux) to create an intense, flavorful and rich “spreadable” cold cut delicacy. The combination of ingredients such as garlic, seasoning spices; cumin, sweet paprika and herbs, thyme and bay leaves creates a potently aromatic and multi-layered flavour dimension. At VIVIN Grocery they are sold in jars for easy storage and use.
For this limited edition fluffy omelette recipe the Chorizo en Manteca is placed delicately inside the omelette, both lard and chunks of Chorizo, before they are sent to be flipped live at the table, in front of the customer! The combination of smooth and bouncy omelette combined with the intensity of the chorizo’s sweet paprika, cumin and mixed herb flavours, makes for an explosive yet refined experience. This omelette is best paired with Sarladaise potatoes as the eggy foam will roll into the potatoes, absorbing all that spicy awesomeness. All fluffy omelette orders come with certified organic mixed green side salad and slices of artisanal baguette bread.
