Centara Grand Beach Resort & Villas Hua Hin shines a light on Hua Hin’s burgeoning dining scene this month, presenting a special seven-course wine-pairing dinner showcasing local artisanal cheese of Del Casaro, Hua Hin’s one and only cheesemaker.
The ‘Say CHEESE’ Wine Dinner is set on Friday, 9th April 2021 in partnership with Del Casaro, Hua Hin’s one and only cheesemaker, at COAST Beach Club & Bistro, the ever-popular beachside restaurant at Centara Grand Beach Resort & Villas Hua Hin. The indulgent tastes and textures of homemade specialty cheeses will be showcased through superb sweet and savoury dishes created by the bistro’s Chef de Cuisine Tharathon Chindaphu, and carefully paired with some of most popular wines from multi-generational Robert Oatley Vineyards of Australia, pioneered wine-growing Longview Estate of New Zealand, and of course, one of Italy’s most prestigious wineries, Tenuta Angoris.
The gastronomic experience begins with a selection of two hors d’oeuvre including fresh mozzarella and colourful cherry tomatoes served in an avocado cup; and homemade ricotta cheese with fresh figs and wildflower honey. The stringy texture and sweet, creamy taste of scamorza and mozzarella cheeses are perfectly presented in New Zealand mussels baked with creamy scamorza cheese; and wood-fired parma ham, wild rocket and mozzarella pizza. An indulgent French-inspired lobster thermidor with smoked scamorza then brings diners to the main course, a seared sirloin steak with chimichurri-topped fresh mozzarella sizzled to perfection. The memorable wine dinner concludes with the classic dessert dish of tiramisu made with traditional mascarpone.
Throughout the evening, an cheesemaking specialist from Del Casaro will be sharing his knowledge of each cheese’s characteristics with the diners in an artisanal cheese-making demonstration in a traditional manner.
