The St. Regis Bangkok invites guests to discover vegetarian fine dining at IGNIV Bangkok (1 MICHELIN star) with a sustainable plant-based menu from September 29 – October 3, 2022.
The four-hands culinary collaboration features IGNIV Bangkok’s Head Chef David Hartwig, joined by guest chef Timo Fritsche from Oz by Andreas Caminada which opened its doors in June 2022.
Housed in the historic coach house directly opposite Schloss Schauenstein (3 MICHELIN stars) in Fürstenau, Switzerland, Oz offers a 100% vegetarian menu featuring produce harvested on the same day from the castle garden and greenhouse. No stranger to the Andreas Caminada family, Chef Timo spent two years working at Schloss Schauenstein before being tasked with Oz which makes the most of the 700 different vegetables, herbs, and fruit which grow around the Schloss Schauenstein.
During his visit, Chef Timo will work closely with Chef David and his network of farmers and local suppliers to source carefully grown herbs, plants, and vegetables. The menu will also showcase his signature fermentation techniques which transform and preserve the richness of plants.
The 4-hands Vegetarian Fine Dining Sharing Experience at IGNIV Bangkok comprises vegetarian dishes from IGNIV Bangkok and Oz. Chef David presents flavor pairings including Sunchoke—Onion—Macaron, Carrot—Crème Fraiche—Red Beet, and Butternut Squash—Radicchio—Hollandaise, while Chef Timo also displays his creativity with dishes including Cucumber—Calamansi—Nori, Thai Basil—Ceviche—Jalapeno, Egg-Ponzu—Morning Glory, Broccoli—Gremolata—Tomato, as well as an innovative cucumber-based dessert.
The fine dining sharing experience offers guests a choice of house-made macarons, fruit jellies, chocolates, and other delights from IGNIV’s signature Candy Store to enjoy with coffee or tea, or to take home.
The Vegetarian Fine Dining Sharing Experience at IGNIV Bangkok is available for lunch and dinner, Thursdays to Mondays throughout from September 29 – October 3, 2022, for THB 4,000++ per person.
IGNIV Bangkok is located on the ground floor of The St. Regis Bangkok. The restaurant is open from Thursdays to Mondays for lunch (12:00 PM – 3:00 PM, last order 1:30 PM) and dinner (5:00 PM – 11:00 PM, last order 8:00 PM).
