Enjoyed as a dessert, as a treat with afternoon tea, or at any time of day that takes your fancy, soufflé-style pancakes can be considered a comfort food. However, in Japan even a simple comfort food like pancakes are taken seriously. In recent years Japanese pastry shops and cafés have been in a flour-dusted race to make the fluffiest and softest soufflé pancakes. Today, the soufflé pancakes made across the country are known to be amongst the most incredibly light and fluffy, so much softer than other similar types of confection. And now you too can enjoy these delicious sweet treats at Up & Above Restaurant and Bar where our talented pastry chefs are serving a choice of fluffy soufflé pancakes topped with smooth vanilla or Matcha ice cream and maple syrup or assorted compotes. A labour of love, these sweet works of art take 20 minutes to craft.
