An authentically gourmet dining experience, Halapua showcases the finest plant-based menu with dishes incorporating seasonal produce sourced from the on-site natural farm when possible, as well as buying freshest fruit and vegetables directly from local Thai suppliers who are passionate to share the flavours of the land.

Chef’s personal interpretation of contemporary plant-based cuisine integrates modern international fusion of Classic French cooking and modernist cuisine techniques to create and reimagine classic dishes like gnocchi, foie gras, steak and potato as well as create new flavour combinations by utilising his extensive knowledge and experience he accrued through his extensive career traveling the world.

Located on the beautiful Thai island of Koh Samui, Halapua is immersed in the carefully preserved native lush tropical nature of Kapuhala Koh Samui Tropical Farm and Training Retreat where Tented Villa accommodation set to open December 2019. The retreat will offer fitness enthusiasts, race runners, corporate high-achievers and those looking to adopt a more eco-conscious approach to travel a holistic and life-enhancing travel experience via a combination of guest services that consider circadian rhythm, plant-based diet benefits, bio-hacking techniques and beyond.

We have created a new restaurant concept that connects gourmet plant-based dining to fitness and social living. We don’t just create beautiful plant-based food, we are highlighting how physical and cognitive performance is directly connected to nutrition.”
