Starting in October, diners can relish the spawning season’s bounty of Japan that favors the best flavor of two autumnal culinary gems “Ikura” and “Salmon”. The two featured ingredients are vividly presented in classic favourites like ‘Sake Ikura Don’, a light and super tasty japanese rice bowl topped with fresh sashimi-grade salmon and salmon roe (ikura), ‘Sake Hoiru-Yaki’ or juicy and flavourful salmon baked in foil, and ‘Ishikari Nabe’, Hokkaido-style salmon & miso hot pot.
Continuing in November, oysters are a high point of any evening at Hagi as Master Chef Hiroshi Masuda showcases an exotic flavour of this truly moreish seafood specialty in his many styles. Prepared using only the freshest oysters of the season, some of the ‘must-try’ dishes include ‘Kaki Furai’ or deep-fried oysters, ‘Nama Kaki’ or fresh oysters served sashimi style, and ‘Kaki Dotenabe’ a Japanese hot pot dish with oysters and vegetables in miso soup.
Last, but not least in December, Master Chef Hiroshi Masuda showcases a wintertime culinary delight ‘Buri’ or yellowtail – famed for its fatty, rich in oil meat and nutritional properties. Promised to sensationally illustrate the item’s peak of deliciousness, the chef’s featured dishes are ‘Buri Aburi Don’ or a hearty flavoursome rice bowl topped with freshly-sliced yellowtail, ‘Buri Daikon’ or simmered yellowtail with daikon radish in a traditional seasoned broth, and, of course, varieties of ‘Buri Sashimi’.
