Local fare with flair: fresh new concept at Azure restaurant, InterContinental Hua Hin Resort

Already a favourite for its prominent seaside location and sweeping Gulf of Thailand views, Azure restaurant at InterContinental Hua Hin Resort now adds further appeal with new cuisine concept.

From July 2018, Azure presents a fresh take – in every sense – on seafood dining in Hua Hin. Taking inspiration from community traditions, the restaurant now emphasises not only fresh-caught seafood supplied by the area’s surrounding fishing villages, but also locally grown fruits and vegetables as well as premium meats produced at nearby farms.

General Manager Michael Janssen explains. ‘We wanted to do something truly different to what’s offered at similar restaurants in Hua Hin. First, put strong focus on local ingredients and preparation methods. Then, delight diners with refined yet straightforward cuisine in a beachfront setting that perfectly complements the food – elegant yet relaxed.’

Diners will experience Azure’s commitment to local ingredients in dishes such as steamed lobster, grilled octopus as well as in top-quality cuts of beef. The restaurant’s signature raw bar, meanwhile, will feature local along with premium imported delicacies including oysters on the half shell, jumbo prawns, crudo, ceviche and more. All told, the new concept makes every meal a farm-and-sea-to-table experience. Azure Restaurant has delighted diners since 2009 with outstanding live station, superb à la carte dishes and delightful drinks. The venue includes roof deck for refreshing breezes and fantastic views of the Hua Hin coastline.

Over to Azure Bar, cocktails by Joseph Boroski, pioneered bespoke cocktails in Thailand with his Bangkok speakeasy, J.Boroski. He now brings the same vanguard approach to coastal Thai tippling with a curated selection of imaginative classics. Fresh ingredients, many locally sourced, combined with carefully selected spirits and a large measure of craft mean a superior drinking experience. For his Azure Bar creations, Boroski has taken inspiration from diverse ports of call, including the Amalfi coast, Cape Town and the French Riviera.

The result is a cocktail selection resolutely international, wholeheartedly Hua Hin and thoroughly Azure.

Restaurant open every day from 11.00 a.m. to 10.00 p.m.; Azure bar open every day from 5.00 p.m. to midnight.
