Often referred to as ‘the king of mullets’ by seafood lovers and known in some regions as the white salmon, the sea bass is a salt-water fish characterised by its delicate flesh and subtle flavours. And now you can enjoy this prized seasonal fish in new signature dishes on the menu at Up & Above Restaurant. They include grilled sea bass, miso, quinoa crust, barley, fennel citrus salad, pan-seared sea bass with tomato concasse, crushed potato and yuzu cream sauce, poached sea bass, dashi broth, leek, Japanese sesame and much more. All preparations allow the delicate flavours and textures of the fish to shine.
The sea bass dishes are available from 4 January – 31 March 2021, daily from 18:00 – 22:30. A la carte dishes priced from Baht 750++.
