Seasonal fresh sushi and sashimi is prepared to order by an expert chef from Michelin Plate restaurant Yamazato while chef-recommended table-served dishes to pass around include special creations such as half Canadian lobster with yuzu beurre blanc (1 dish per person), and teppan -seared Jean Larnaudie foie gras served with toasted yomogi brioche and fig chutney, tuna Tataki, Ponzu gel,Sable and Sardine Ceviche Teriyaki on Toast with Granny smith Apple and our signature table served dessert.
Up & Above’s famous seasonal seafood on ice also returns with a fine selection of Alaskan king crab, Canadian lobster, razor clams, blue crab, Dutch mussels, tiger prawns and fresh chucked French oysters.
In addition, fresh seafood from the grill encompasses tiger prawns, and fresh Squid served with spicy seafood sauce. There is a selection for salmon lover such as, house cured and hot smoked Aurora Salmon Donburi station.
Elsewhere the Butchers corner serves up meaty treats such as pan seared sea bass, herb crusted lamb ribs, roasted Free range Capon Chicken, Porchetta, and roasted 200 day aged Australian prime rib. All of which are complemented by healthy salads, organic vegetables, baby potato braised with fresh herbs & café de paris butter, glazed organic heirloom carrots, braised endive in mandarin dashi and much more.
Thai favourites such as wok-fried crab with celery in yellow curry, roasted duck curry and a wide range of international seasonal dishes such as buratta, organic heirloom tomatoes with fresh basil, olive oil and maldon salt, hamachi ceviche and many more.
Seasonal Artisan selected cheeses with condiments and premium charcuterie such as proscuito, selection of saucisson, Japanese ham, chicken liver parfait with port wine braised shallots, Japanese infused pickles and chutneys and indulgent desserts such as homemade ice cream and gelato cart, served in a fresh wafer basket offer a fantastic finish.
