Noěmada’s First Four-Hands Collaboration – Honours Traditional South-American and Carte Blanche Fare

 On Friday 21 October 2022, Noìmada is hosting its first ever Four-Hands Nine-Course Degustation Dinner. This unmissable culinary experience will be brought to life by our head Chef Andre Josef Nweh Severino and Chef Som Jutamas Theantae of the highly acclaimed SOM’S TABLE.

Evoking the nostalgic flavours of home, Chef Andre will share his rich South American heritage and passion for food. Guest Chef Som will go off-script with a unique Carte Blanche menu, bringing eclectic influences from her experiences abroad to every dish. Together, the celebrated chefs will curate a nine-course degustation menu showcasing the true flavours of the shore, taking a minimal-waste approach to ensure every piece of fresh seafood is used to its fullest potential.

Highlights include Chef Andre’s Salmon Ceviche, a citrusy and refreshing celebration of raw, premium quality Norwegian salmon. From Chef Som, a Coconut Milk Tartlet Filled with Salted Cod is a tantalising treat that will surely surprise your taste buds. Nothing can surpass the “Escabeche de Pescado”, a collaborative course that imbues a famous dish from Chef Andre’s homeland with flavours from the personal memories of both chefs. Last but not least, dessert will see the two chefs conjure up intriguing sweet concoctions to end your meal on a high note.
