Acclaimed Chef Brings Michelin-Starred Sparkle To The Enchanting Chao Phraya River And Majestic Wat Arun

SALA Hospitality Group, will take diners on an exceptional culinary journey with Chef Christian Herrgesell previously from the renowned Michelin Starred restaurant Tim Raue, Europe.

Staged at sala rattanakosin Bangkok, this exclusive epicurean evening will feature rooftop canapés and a sensational 5-course dinner that presents innovative Asian-inspired cuisine and premium wines from Central Wine Cellar.

Chef Christian hails from Germany and is an acclaimed culinary director and concept creator with more than 20 years’ experience, of which 10 years were as Head Chef at Restaurant Tim Raue, Berlin which has been ranked on the prestigious list of ‘The World’s 50 Best’ since 2014, and holds two-Michelin Stars.

During his time at Tim Raue, Chef Christian managed the opening of thirteen restaurants under this flagship which included concept creations in Dubai, St. Moritz and Sylt. His gastronomical journey has taken him across Europe, working in some of the most renowned establishments. His discovery of Asian flavours and ingredients has now inspired his passion for fusing the various Asian Cuisines with his classical French cooking techniques.

Come January 2022, Bangkok’s food connoisseurs have the rare occasion to experience Chef Christian’s creativity as he puts a twist to his Modern Asian cuisine. With ingredients sourced from diverse Asian cultures including Japan for its product quality, China for its aromatic spices and Thailand for its complexities, and with most of the ingredients available locally, Chef Christian adds his classic French methods to bring you some of the best mouth-watering dishes Bangkok has yet to experience.

The evening is further complemented by premium wines from France, Germany and Italy carefully selected and paired by Central Wine Cellar’s eminent sommeliers.

Sharing the paired wines’ notes during the evening are Ms. Apple who holds the Court of Master Sommeliers and Wine & Spirits Education Trust and has worked in some of the top wine destinations in Bangkok including the Michelin-starred restaurant Paste; and Ms. Holly who graduated from NYU and received her sommelier certification from the Court of Master Sommelier and had worked in some of the finest establishments in Singapore, New York, Taipei and Bangkok.

The culinary adventure starts with pre-dinner sunset drinks and canapés at the rooftop bar with magnificent views over the Chao Phraya and the spectacularly lit Temple of Dawn (Wat Arun). Chef Christian’s pass-around canapés will awaken your taste-buds as he perfectly fuses the Asian aromatics and freshness in the shellfish salad, chili pork belly & sesame bites, salmon with tom yam & kumquat and the sweet taste of honey BBQ chicken. Enjoy these canapés paired with the Maison Antech, Expression, Brut, Cremant de Limoux – France, a complex sparkling made with the Champagne method, featuring intense notes of green apples, ripe lemons and hints of toast.

The 1st course is a Japanese-inspired dish of Hamachi Sashimi with soy marinade & radish paired with Domaine Marguerite Carillon, Aligote, Burgundy- France 2019, with fresh notes of unripe pears, bright Meyer lemons and white flowers.

This is followed by the 2nd course of another Japanese favourite with a spin on novel ingredients – spicy tempura prawn with tomato & coriander that brings freshness to the palate, artistically paired with a classic off-dry Riesling with notes of peach, wet stones and ripe yellow apples – the Max Ferd Richer, Riesling Kabinett, Brauneberger Juffer, Mosel – Germany 2018.

Chef Christian’s 3rd course showcases his love for seafood with the tender and succulent steamed cod beautifully harmonizing with the tanginess, tartness and sweetness of yuzu, celeriac, apple and shiso leaves salad. To bring out the best of these flavours, our sommeliers have paired this delicious dish with Feudi di San Gregorio, Fiano de Avellino DOCG, Campania, Italy 2018, one of the great white wines of Southern Italy offering complex notes of honeyed spices, quince and fresh hazelnuts.

Roasted Australian short rib is cooked ‘Shanghai style’ with five spice, fresh ginger and orange and a variety of locally sourced herbs and vegetables, with papaya being a surprise ingredient in the mix! This fine dish is paired with an intricately layered red wine from the volcanic slopes of the Etna with bright notes of red cherries, dark raspberries and ripe strawberries – the luscious Terra Constantino, DeAetna, Etna Rosso, Italy 2017.

Chef Christian ends this fabulous culinary journey on a sweet note with a rather intriguing dessert of yoghurt mousse with lemongrass, salad of lychee & raspberry and a raspberry sherbet. Perfect to end a great repast is the selection of Petit Guiraud, Sauternes, France 2016, the ultimate expression on sweet wine with deep flavours of orange blossom, saffron and Christmas spices.
