Executive Chef Carlo Valenziano has designed classic and contemporary dishes to evoke gastronomic memories, with bracing flavours of coastal Spain. Chef Carlo’s inspiration comes from his exciting trips in Spain, tasting popular dishes and meeting with many local chefs and culinary experts. There is so much to talk about in the stories behind these fantastic dishes.

The story begins with everyone’s favourite appetiser, featuring ‘Jamón ibérico’ – the celebrated Spanish cured-ham platter served with grilled bread with tomato; ‘Tortilla de patata’ – traditional Spanish potato and chorizo omelette served with aioli; ‘Albondigas’ – beef meatball stew in tomato sauce and pimentón; and more, which cannot be missed.

Chef Carlo’s main-course specialities include a tempting selection of ‘Confitado de pato a la Catalana’ – the popular duck leg confit, prunes, pine nuts and duck jus served with mashed potatoes; ‘Pulpo a la gallega’ – Galician octopus, olive oil potatoes, smoked paprika; and ‘Pescado a la plancha con escalibada’ – grilled seabass, charred capsicum, eggplants and pine nuts.

This fascinating story around the coast of Spain ends with a selection of delicious desserts, featuring ‘Tarta de manzana’ – the classic warm creamy apple tart, roasted almonds, apple chips, vanilla ice cream; the famous snack ‘Churros limon chocolate y pistacho’ – dulce de leche and chocolate sauce; and ‘Flan de caramelo’ – hazelnut chocolate chantilly, chocolate tuile, fresh fruits. Each carefully crafted dish conveys its own story and awaits for gourmands to experience it.
