Introducing the Blossom & Bloom Afternoon Tea at Peacock Alley

Waldorf Astoria Bangkok is pleased to introduce its new Blossom & Bloom Afternoon Tea with fine savory and sweet pastries by executive sous-chef Chalit (Toddi) Kobaukaew and executive pastry chef Andrea Noli, for sharing and enjoying with a good friend over cups of loose-leaf tea in the stylish ambience of Peacock Alley. The new afternoon tea set for two features a satisfying selection of delectable sandwiches, savory and sweet pastries, freshly-baked scones served with clotted cream and local jams, Mariage Frères tea, or coffee, and is offered every day of the week during 1:00 p.m. – 5:00 p.m.

Speaking about his inspiration behind the Blossom & Bloom Afternoon Tea, Italian executive pastry chef Andrea Noli said: “When my fellow Italians in Europe started to enjoy normal everyday life once more, I said to my team here that our situation will also start improving and that one day, we will also be relaxing, smiling and enjoying our daily lives. Experiencing the pandemic has strengthened and motivated the team here, and that energy was my inspiration for creating the Blossom & Bloom Afternoon Tea. It’s to express cheer that can be shared and enjoyed with a good friend or loved person”.

The savory bites display Chef Toddi’s French culinary touch combined with a deep understanding of Thai local ingredients, and creativity. The savory selection includes Smoked Wagyu Beef Tartar, Brioche, Horseradish, Caviar; Smoked Salmon, Cheese Gel, Salmon Roe, Ginger Pickled, Bagel; Foie Gras, Granny Smith Compote, Apple Cider, Pistachio. Chef Toddi’s highlight is a duo on one plate that features his family recipe of Mini Pâté En Croûte, and Royal Project Egg Chawanmushi, Dashi Foam, Ginko Seed.

Chef Andrea noted that for the sweet pastries, “their key ingredients are fruit and tea, which highlight the perfect balance of natural sweetness and healthy bitterness for the palate”. He and his team created and named each sweet pastry after different flowers, such as: Lavender & Pear Choux; Chamomile & Blackberry Cake; Orange Blossom Chocolate Tartelette; and Jasmine, Cherry and Lemon Flower Mousse.
