Restaurateur and Entrepreneur, Maurice Terzini (Icebergs Dining Room and Bar, CicciaBella, RE, Belongil Beach Italian Food) has announced a residency to evolve the InterContinental Sydney Double Bay’s food and beverage offering with the opening of The Bar, assisted by his long-standing partner and Director of Operations, Dave Owen.
Known for hosting the likes of Princess Diana, David Bowie, and Elton John, The Bar’s launch in mid-June will be the first steps towards reclaiming the hotel’s grandeur through an elegant service offering.
Inspired by the great hotel bars of London, Rome, Paris and New York, Terzini will bring back the glamour and sophistication to Sydney with martini trolley bars, table side service, and a decadent cocktail and food menu within the Classic Cocktail & Supper Club.
The menu will be a classic combination of Maurice Terzini and Alex Prichard (Icebergs Dining Room and Bar), showcasing the best of local produce with a focus on classic Italian, Australian and European dishes. Lewin White (Icebergs Dining Room and Bar, Quay, RE) leads the kitchen as The Bar Head Chef, working alongside Executive Chef, Denny Lohanda.
Key menu highlights include N25 Kaluga Caviar, Blinis with Cultured Cream & Chives, Beef Tartare, American Bar Cheeseburger, Spanner Crab & Pyengana Cheddar Lasagnette and Marron Cooked Over Coals, Served with Crêpes.
The beverage menu is reconstructed classic cocktails with a modern twist, paying homage to the world’s most renowned cocktails throughout history. The ingredients are high-end, simple and elegant, including but not limited to gold leaf olives, blends of French and Italian vermouths of the world, and herbaceous and citrus-based liqueurs.
Ana Page, The Bar’s Beverage Creative Director, designed a masterpiece series of cocktails, with something for everyone’s desire including but not limited to The Bar Martini, The Icebergs Bloody Mary, The Bar Spritz, and The Contessa.
For the design and interiors, renowned Sydney-based experiential design practice, Alfred, was tasked to bring their shared vision to life. Described as “a Supper Club mixed between a classic cocktail bar and a 1920s piano lounge”, the team dived into the archives storage of the hotel, finding unique and historical pieces from the venue’s past including grand silverware and signed photographs. The colour work is bold with lots of pinks, with artworks commissioned by Vicki Lee.
Creating experiential moments for the guests, Terzini has curated an events and activations program for The Bar centred around music, art and food. The nights will showcase the decadence and exclusivity of the luxury destination.
Playing three nights a week, the venue welcomes back The Piano Man – Scot Finnie, one of Australia’s foremost piano vocal entertainers and a previous performer of the hotel’s past. The entertainment offering will also include the InterContinental All Stars, a trio who will complement the identity of The Bar by creating the venue’s own sound, with everyone welcome to join.
The Bar in collaboration with Maurice Terzini and InterContinental Double Bay Sydney will bring back the elegance and sophistication of the classic hotel bars from around the world.
