Ora King Salmon is heralded as ‘New Zealand’s seafood version of Japanese Wagyu beef’. Their flesh is considered softer and more delicate than other salmons and the flavour and texture of King Salmon is full, rich and almost silky, with large, soft flakes.
Our experienced chefs have created 8 new menus utilizing this beautiful fish; Smoked Salmon Tartare Wasabi Espuma, Smoked Salmon with Peppers, Gravlax & Dill Mustard, Salmon Sashimi, Salmon with Salt Crust (Carvery), Salmon Chinese style, Salmon Thai style and Salmon Feuillete.
