Bangkok’s renowned Red Sky restaurant, located on the 55th floor of Centara Grand at CentralWorld, has announced the addition of the exceptional Gundagai lamb and Blue Foot mushrooms to its menu. This culinary experience promises to tantalize even the most discerning of palates.
Imported from Australia, Gundagai lamb is known for its superior quality, a higher percentage of intramuscular fat or marbling, and perfectly balanced lean meat. To complement this prime meat, Chef de Cuisine Christian Ham pairs it with Blue Foot mushrooms, which are rare, highly sought-after, and valued for their woodsy, earthy flavours and velvety texture.

Chef Ham showcases his unparalleled skills in the kitchen by creating a variety of dishes that bring out the unique flavour profiles of these two exceptional ingredients. The Highlight menus include the Gundagai Lamb Stew “Navarin” style with black truffle and fresh goat cheese toast, tomato concassé, and green pea purée. For the Charcoal Grilled Gundagai Lamb Chop and Chump, the meat is paired with Blue Foot mushroom fricassée, pink garlic, fresh rosemary, and extra virgin olive oil mashed potatoes. The Pan Seared Gundagai Lamb Striploin stuffed with blue foot mushrooms is served with a selection of sauces, including lamb jus and Choron Isigny cream “béarnaise style”. The Traditional Gundagai lamb rack “en persillade” is complemented with an aromatic herb, bread crumb, and pink garlic crust, blue feet mushrooms, eggplant caviar, and zucchini.
