Chef Carlo’s main-course selection of carefully crafted ingredients include ‘Boeuf Bourguignon’ – tender braised beef in a thick red wine sauce seasoned with aromatic herbs and served with vegetables known to Burgundy; ‘Porc à la Moutarde’ – Kurobuta pork loin tucked under mustard sauce and braised cabbage jam native to Dijon; and ‘Sole Meunière’ – imported whole lemon sole cooked with butter, lemon juice and capers renowned in Paris.
