Seasonal Japanese Whitebait at Up & Above Restaurant

A true early summer treat, healthy Japanese whitebait (shirasu), are the star of the show at Up & Above Restaurant throughout May and June. Known for their high protein and calcium content, they are also packed with magnesium and zinc and relatively low in fat and sodium. While some like to eat shirasu fresh and raw, most prefer to eat them either sun-dried or, in a similar fashion to tempura, coated with a seasoned wheat flour or potato starch mix and lightly fried (karaage).

At Up & Above Restaurant the chefs are serving a delicious, zesty appetiser of shirasu-karaage. First the tiny fish are lightly fried in light oil. In a bit of culinary theatre the service team demonstrates what to do next. The fish are placed in the paper bag and the wasabi powder, dried seaweed and Shichimi Togarashi are added. The bag is secured tightly and shaken well to coat the fish, which is then plated and enjoyed with the citrusy yuzu mayonnaise. Light and bright with flavour, it is the perfect way to begin a meal.

The Shirasu-Karaage Japanese whitebait appetiser is available daily from 6 p.m. ā€“ 10.30 p.m., 1 May – 30 June 2019, at Up & Above Restaurant. Priced at Baht 350++.
