Sra Bua by Kiin Kiin Unveils the Secrets of Summer

The renowned one-Michelin-star restaurant for four consecutive years, Sra Bua by Kiin Kiin at Siam Kempinski Hotel Bangkok has unveiled its latest summer dining secrets as part of a new ‘Summer Journey’ set dinner menu available from 12 April 2021. Sra Bua by Kiin Kiin is recognised as the home of modern Thai gastronomy where exquisitely composed dishes are prepared using global cooking techniques with the best-quality seasonal ingredients.

The secret to the 2021 ‘Summer Journey’ set menu is the collaboration between awardwinning Michelin-star chef Henrik Yde-Andersen and chef Chayawee Suthcharitchan, the head chef at Sra Bua by Kiin Kiin. These culinary masterminds have once again joined hands to create dishes based upon the delicious tastes and refreshing flavours
found with the best-quality summer seasonal ingredients.

The ‘Summer Journey’ set dinner menu, comprising eight tantalising courses, begins with Sra Bua by Kiin Kiin’s famous ‘street food’ nibbles, such as salted egg yolk with crab roes; crispy chicken with papaya salad; Thai aubergine with garlic and chilli; moon food edible bag of puffed rice flavoured with celery, yellow curry and prawn powder; tom ka meringue and mushroom; mushroom shot with ginger stuffed morel; and soy caviar with wasabi and
passion fruit ceviche.

The captivating set dinner features tom yum with cilantro waffles and relish based on dried codfish with lime leaf marinade; fluffy smoked salmon with mango salad; buttered miso with flan and oyster – Æbleskiver with dried shrimps; crab and asparagus red curry soufflé baked in banana leaves and served with lobster bisque; and foie gras with tamarind, pear chutney and beef short ribs massaman with sunchokes.

This extraordinary culinary journey continues perfectly with a truly refreshing dessert to cool down the heat this summer, featuring pineapple tartar with coconut, turmeric, Thai herbs and rum snow; and tea ice cream with kaffir lime zest compote; before concluding in style with the imaginative and very creative petit fours.

“The aim of Sra Bua by Kiin Kiin is to dazzle and create a memorable culinary and dining experience that lasts beyond the final bite for every guest, by ensuring fresh, innovative and tailored cuisine,” explained Head Chef Chayawee Suthcharitchan. “We invite guests to enjoy a truly extraordinary culinary performance as we choreograph different tastes through each dish with amazing Thai flavours in daring combinations.”
