St. Regis Bangkok Debuts New Western & Thai Menus at Viu

VIU restaurant, located on the 12th floor of The St. Regis Bangkok, introduces the next chapter of A NEW Narrative of Culinary Set Menus,” showcasing 4-course Western and Thai set menus inspired by a theme of culinary experience and passion by Chef de Cuisine Pongsakorn Boonruang. Evolving every quarter, the set menu concept aims to offer exquisite culinary experiences throughout the year, highlighting fresh seasonal ingredients, with the new sets available from July through September 2024.

Inspired by the rich culinary heritage of ancient Thailand, Chef Pongsakorn introduces a Thai set menu that showcases local wisdom of age-old food preservation methods through the finesse of modern culinary techniques. Featuring essentials like sun-dried fish, smoked fish, and fried rice prepared with tallow, each dish offers an authentic taste of the past refined and presented in a fine dining style.

A contemporary twist on classic meat skewers, Jang Lorn features fish meat blended with Thai spices and grilled to perfection, accompanied by compressed cucumber infused with dashi for a rich umami flavor. The second course elevates the experience with a Spicy and Sour Smoked Fish Soup, paired with pan-seared scallops to add a delightful combination. For the main course, guests can choose between Grilled Beef Striploin, served alongside spicy beef tallow fried rice, drawing inspiration from the traditional Thai fried rice prepared without egg, or Grilled Salmon in a Southern Yellow Curry Sauce, married beautifully with vermicelli rice noodles. A deconstructed version of Kluay Buad Chee breaks down the classic elements of the beloved bananas in coconut milk dessert, presenting a fresh perspective of a timeless sweet treat.

The new Western set menu, on the other hand, takes its inspiration from the summer season in Italy. It emphasizes fresh and seasonal ingredients that come together in a delightful display of contrasting flavors—from the bitter and sour to the sweet. Guests can indulge in a culinary journey that features premium selections such as Wagyu beef, foie gras, and Hokkaido scallops, each ingredient chosen to celebrate the richness and diversity of Italian flavors.

The Western set menu opens with a Hokkaido Scallop Crudo, artfully paired with pomegranate, crisp bell pepper, and luxurious caviar, capturing the freshness of the sea. The second course continues the essence of an Italian summer with a Lobster Mousse Tortellini, served in a rich lobster bisque, enhanced with zesty orange gel and fresh basil pearls. For the main course, choose between the opulent Wagyu Beef Tenderloin “alla Rossini,” accompanied by Rougié foie gras, or the delicate Pan-Seared Halibut with cauliflower, crunchy almonds, and smooth beurre blanc. The meal concludes with a Strawberry Vanilla Mille-Feuille, a perfect blend of ripe strawberries and creamy vanilla in a delicate pastry, ensuring a delightful finish to this culinary journey.

Perched on the 12th floor, VIU boasts stunning views over the Royal Bangkok Sports Club and the vibrant city skyline, setting the scene for a memorable business lunch or a luxurious gastronomic setting. The new 4-course A Narrative of Culinary Western and Thai set menus at VIU are available for lunch from 12:00 PM to 3:30 PM except Sundays and dinner from 6:00 PM to 10:00 PM except Fridays and Saturdays, available from July through September 2024 for THB 2,500++ and THB 1,500++ per person respectively.
