The St. Regis Bangkok Unveils Exquisite Beef Omakase Dinner Experience By Chef Pam

The St. Regis Bangkok welcomes Chef Pichaya “Pam” Utharntharm of Potong Restaurant, Opium Bar, The Table, and Smoked, for an exclusive guest chef takeover at The St. Regis Bangkok.

Chef Pam will be presenting a Beef Omakase at VIU restaurant on the 12th floor of the hotel on Tuesday, 19th July and Wednesday, 20th July 2022.

The one-of-a-kind tasting menu will feature a curated selection of Chef Pam’s signature dishes. The six-course dinner will showcase premium beef prepared with Chef Pam’s culinary techniques honed over the span of her career, which include a few years at the legendary Jean-Georges restaurant in New York.

Setting the tone for the degustation dinner, Chef Pam offers beef broth and beef tongue skewers as amuse bouche. The first course features Kobe beef tartar presented in a cone and topped with caviar, followed by a unique beef jam served with sourdough bread and pickles.

The culinary journey continues with a delicately marbled Australian Wagyu Flat Iron Steak (40g), and a Tenderloin Sando comprising 60g of tender beef grilled to perfection. For the main course, Angus beef ribs (50g) is slow-roasted for 48 hours and served with aromatic beef rice. The six-course meal ends with a delightful chocolate-based dessert and mignardise.

Throughout the years, Chef Pam has been recognized with many awards, including the winner of the prestigious “Asia Youth Hope Cooking” contest held by Les Disciples Escoffier in 2011. In 2018, she was included in the Forbes 30 Under 30 list, and later became a judge of Top Chef in Thailand, as well as guest judge for the show in the Middle East.

In less than a year since Chef Pam’s Restaurant POTONG opened in September 2021, the restaurant, located in Chef Pam’s ancestral home in Bangkok’s Chinatown, has already won recognition for its progressive Thai-Chinese cuisine, including inclusion in the Condé Nast Traveler The Hot List 2022.
