Rossini’s – Set Menus for You & Me

Chef Gaetano has created special 5-course “You & Me” set menus which begin with an amuse bouche of foie gras terrine and raspberry consommé. The “You” menu includes Hokkaido scallop carpaccio, orange carrot, and sea lettuce, followed by lightly salty baccala with porcini mushroom, succulent lamb rack with artichoke, goat milk yogurt cheese and leek and mint gel, and more, while the “Me” menu offers tartare of seabass on a chicken tuile with soft cheese chive and licorice essence, as well as green peas with calamari, oyster leaf, Hokkaido scallop and caviar, and ocean flavor spaghetti carbonara. Both diners will enjoy a luxurious dessert of chocolate in the forest

BarSu – Valentine’s Seafood Platters to Share
Surprise your loved one with a romantic evening at our chic gastro lounge, BarSu. Chefs at the open kitchen will prepare fabulous seafood platters and oysters, perfect for sharing. The finest quality imported seafood will include half a dozen Fine de Claire or Gillardeau oysters, a Deluxe Seafood Platter with Gillardeau oysters and Alaskan snow crab legs, and a Luxury Seafood Platter with Fine de Claire oysters, river prawns, and Boston lobster, all served with lemon, mignonette and cocktail sauce.

Loving couples are invited to step out of their comfort zone for an extra sensory dining experience enjoyed in total darkness. The Sala – Valentine’s Day Dinner Under the Stars
On Valentine’s Day, the enchanting tropical poolside garden at The Sala is a wonderful setting for a 4-course set dinner enjoyed under a canopy of stars.
The menu will include an amuse bouche of compressed watermelon with dried fish flakes, followed by an appetizer of yellow tail tartare with toasted rice powder, lime gel and crispy salmon skin. The couple will also be served Andaman bay prawn and coconut cream soup, a choice of black cod with mixed crispy herbs and southern style yellow curry reduction or Australian Wagyu fillet mignon, potato puree, baby spinach,
mushroom sauce, and a dessert of ricotta cheese and coconut parfait, poached Phuket pineapple and pistachio ice cream.

The Living Room – Le Petit Chef
This Valentine’s Day, enter the world of Le Petit Chef, an extraordinary high-tech visual mapping, light and sound experience at your table.
The creative 6-course menu will include an appetizer of Hokkaido scallop carpaccio with Sturia caviar, marinated radish, ponzu sauce, finger lime and oxalis, followed by a fabulous fusion tom yam bouillabaisse, and half a Boston lobster gratinated with Mornay sauce. There will also be grilled beef sirloin rubbed in toasted rice, dried chili, lime gel, and fresh herbs, a pre dessert of coconut and white chocolate, lime cream foam, peanuts and chocolate ginger sauce, and a dessert of rice pudding brûlée with saffron, cardamom and cherry sherbet.
