From Tokyo To Bangkok: The St. Regis Bangkok Presents 1-Michelin Starred Gucci Osteria Tokyo

The St. Regis Bangkok unveils its newest guest chef series, featuring 1-Michelin starred Gucci Osteria Tokyo’s Chef Antonio Iacoviello, that embodies the spirit of Gucci and the culinary vision of renowned chef Massimo Bottura from Osteria Francescana in Modena, Italy (3 Michelin stars), with an exclusive cooking class on November 15 and an 8-course dinner at VIU from November 16-18, 2023.

One of them is the guest chef series, presenting world-renowned celebrity chefs at VIU. In April 2023, the culinary pop-up in collaboration with Gucci Osteria Seoul was a remarkable success; therefore, we carry on our special relationship with the Gucci Osteria family and are excited to introduce the 1-Michelin starred Gucci Osteria Tokyo to Thailand. Gucci Osteria da Massimo Bottura stands as a testament to contemporary Italian dining spread across notable global destinations including Florence, Beverly Hills, Seoul and Tokyo. Each location possesses its own charm, yet all resonate with a common gastronomic ethos rooted in innovation, sophistication, and season-inspired allure.

The dinner commences with Memorie d’Estate, an amuse bouche cold soup made with three different kinds of tomatoes and strawberries, inspired by Antonio’s childhood memories at his grandparents’ farm. Crafted with sweetbread, apple, and beetroot, the following Autunno embodies the hearty, warm flavors of the season, while Italian, Thai and Japanese cultures intertwine in a roller coaster of bitterness, acidity, and freshness with Lumaca In Verde, a sea snail and Thai herb salad. For the next course, Piadinia: a Love Story between Italy and Japan, is a contemporary take on the Japanese mille crepe cake, using piadina Italian flat breads layered with local prawns for a dish best enjoyed with your hands.

A mainstay and ever-evolving dish on the Gucci Osteria Tokyo menu, A Walk in the Fields is a pasta and Matsutake mushroom dish crafted to evoke the smell and colors of fresh cut grass. For his main course, Chef Antonio pays homage to his mentor, chef Massimo Bottura, drawing inspiration from his renowned dish “Chicken, Chicken, Chicken Where are You?” and reinterpreting the traditional Italian Parmigiana as Deer, Where are You?

A nod to one of Chef Antonio’s favorite cocktails, Gin Tonic is made from lychee and apple osmotized in Nikka (Japanese gin) and tonic water, served in small foam bites to cleanse the palate. The epicurean journey draws to a sweet close, inspired by his memories of the end of the Italian summer when fig leaves would fall from trees and breakfasts consisted of bread and figs. Che Fico! brings together bread and fig molasses, fig ice cream, and fresh fig confiture, a simple combination yet meaningful layering of flavors, similar to the cuisine of Chef Antonio’s native Italy.

“This menu is inspired by my two favorite seasons in Italy – Summer and Autumn – and pays homage to the amazing products you can find in the equivalent seasons in Japan and Thailand. Join me on a journey from Italy and Japan, my home country and the one that welcomed me two years ago when we opened Gucci Osteria Tokyo, presented with a touch of Thainess,” said Chef Antonio Iacoviello, Head Chef of Gucci Osteria Tokyo.

For those seeking a hands-on experience crafting fresh Tortellini paired with a rich Parmesan cream, a limited-seating Gucci Osteria Tokyo Cooking Class is available at THB 2,200++ per person on November 15, 2023. This immersive session will be conducted in two two-hour intervals starting at 12:00 PM – 2:00 PM and 2:00 PM – 4:00 PM at VIU on the 12th floor of The St. Regis Bangkok.

The Gucci Osteria Tokyo guest chef dinner is priced at THB 5,200++ per person for the 8-course experience (additional THB 1,500++ including 3 glasses of wine pairing, or THB 2,700++ including 7 glasses of wine pairing including 1 cocktail) presented in two rounds; from 6:00 PM – 8:00 PM and 8:00 PM – 10:00 PM from November 16 – 18, 2023, at VIU.
