St. Regis Bangkok’s New 4-Course Culinary Saga at VIU!

VIU restaurant, located on the 12th floor of The St. Regis Bangkok, introduces the next chapter of A Narrative of Culinary Set Menus,” showcasing new 4-course Western and Thai set menus inspired by a theme of discovery and the magic that unfolds when perfect ingredient pairings surprise beyond imagination. Evolving every quarter, the set menu concept aims to offer exquisite culinary experiences throughout the year, highlighting fresh seasonal ingredients, with the new sets available from now until June 30, 2024.

With over a decade of experience in the culinary field, Chef de Cuisine Pongsakorn Boonruang has curated these menus around his personal journey of discovery, inviting guests to share in the joy of unanticipated, flavorful tastes that lie at the heart of the set menus. The set menus also showcase his immense creativity, blending the essence of Western and Thai cuisine with meticulous preparation, the finest ingredients, and delicate plating to present not just a meal, but an experience of discovery that resonates with diners.

The Western set menu opens with a vibrant first course of Mackerel Escabeche, a traditional Mediterranean dish accentuated with Foie Gras Glaze, Black Pepper Mango, Pickled Shallot, Fennel, and a Citrus Dill Oil Dressing. This is followed by a second course of Baked Cauliflower Soup alongside Cauliflower Risotto, Pan Seared Scallop, Guanciale Bits, and Sage Butter. For the main course, diners have the option to indulge in either the Grilled Australian Striploin with Potato Fondant, Truffle Carpaccio, Broccolini, and Beef Jus, or the delicate Baked Cod Fish accompanied by Four Varieties of Leek and Caviar. The Western dining experience is brought to a sweet conclusion with Vanilla Honey Cremeux, paired with Lemon Curd, Yuzu Sorbet, Organic Honeycomb, Granola, and a Honey Golden Tuile.

The Thai set menu offers an equally exquisite culinary journey, featuring dishes that are not only a testament to Chef Pongsakorn’s mastery but also his personal favorites from his native cuisine. The culinary journey begins with an inviting first course of Prawn Satay Tartlet, complemented by Cucumber Relish, Pickled Shallot, Peanut Sauce, and Ar-Jard Gel. The journey continues with a second course of Braised Veal Cheek served alongside Sour and Spicy Roasted Rice Soup. For the main course, guests can choose between the Pan-Seared Duck Breast with Caramelized Pineapple and Grape Confit in a Red Curry Sauce accompanied by Steamed Jasmine Rice, or the Grilled Seabass in Banana Leaf with Spicy and Sour Sauce, served with Tom Yum Fried Rice. The Thai culinary voyage concludes on a high note and a symphony of textures with Soy Milk Panna Cotta, drizzled with Ginger Syrup, and accompanied by Ginger Candy, Chinese Dough, Black Sesame Crumble, and Black Sesame Ice Cream.

The new 4-course of “A Narrative of Culinary” Western and Thai set menus at VIU are available for lunch from 12:00 PM to 3:30 PM except Sundays and dinner from 6:00 PM to 10:00 PM except Fridays and Saturdays, available from now until June 30, 2024 for THB 2,500++ and THB 1,500++ per person respectively.
