As the head chef and proprietor of ā€˜LAB XXIV by KUmudaā€™, Ā selected as one of the worldā€™s top 1,000 restaurants in the world-famous gastronomic guide ā€˜La Liste 2023ā€™, chef Edward Kwon has created a culinary haven for gourmands in South Korea and is endeavouring to help Korean cuisine become more widely known internationally. Chef Kwon’s passion for the cuisine of his home country is reflected in every dish he creates, showcasing his love for blending traditional Korean flavours with a modern twist. His meticulous attention to detail, which produces visually stunning and mouth-watering dishes that are nothing short of masterpieces, distinguishes him from his contemporaries. Using only the finest, locally and internationally sourced ingredients, Chef Kwon transforms his culinary creations into true works of art. Each dish is carefully thought through and crafted to perfection, showcasing his talent for pushing culinary boundaries while still paying homage to his roots.

The 12-course journey is designed to reflect signature Korean dishes with the finest ingredients with a contemporary presentation, beginning with five famous canapĆ©s to offer guests a new perspective featuring ā€˜Sae Woo Jangā€™ ā€“ sweet shrimp tartlet, fermented in soy sauce with yuzu puree, sea grape and crispy white kumbu; ā€˜Bulgogiā€™ ā€“ 10-years-aged soy-marinated beef fritter rice ball with a slices of black truffle; ā€˜Dakgalbiā€™ ā€“ spicy chicken croustade, a quintessential Korean spicy chicken stir-fried dish with the rich gochujang sauce and the various vegetables served in a flaky French croustade, nuts and cilantro; ā€˜Yukhoeā€™ ā€“ Korean-style Wagyu beef tartare served on a brioche with Korean pear and Avruga caviar; and ā€˜Gimmariā€™ ā€“ chilli-marinated seaweed cannelloni served with otoro, kimchi and sea urchin, which cannot be missed.

The journey continues with the sixth course, presenting ā€˜Corn Tarak-Jookā€™ ā€“ corn porridge served with squid, brown rice and potatoes, which is a popular dish served in the palace during ancient times. The seventh course includes the ā€˜Abalone Jjimā€™ ā€“ steamed egg custard served with abalone, salmon caviar and enoki mushrooms. This leads into the eighth course featuring ā€˜Mulhoeā€™ ā€“ chilled raw sea bream with chilli broth, octopus and Gochujang paste.

The ninth course is ā€˜Samchi Guiā€™ ā€“ charred mackerel from Busan served with thress kinds of sauce including Samjang, red chilli and chives. The tenth course is the main course, ā€˜Galbiā€™ ā€“ slow cooked premium Wagyu beef at 58 degrees an hour with Ganjang, garlic and served with ā€˜Banchanā€™ Korean fermented condiments, which complete this dish.

The 12-course menu concludes with surprise desserts to celebrate the journey with ā€˜Hu Sikā€™ ā€“ Korean-inspired desserts including Gamte, tangerine and omija, before concluding with ā€˜Da Gwaā€™ ā€“ petit fours of black sesame macaroon, jujube rocher, red ginseng caramel and wild raspberry.

This 12-course menu is priced at THB 4,900++ per person. An additional ā€˜seven-glass wine pairingā€™ is priced at THB 2,700++ per person and a refreshing ā€˜seven-glass beverage pairingā€™ is priced at THB 870++ per person, including fresh juice, tea, mocktails, infused

water and ginger beer.

ā€˜Edward Kwon in Bangkokā€™ pop-up restaurant will be available from 7 July until 7 October 2023 daily except Tuesday, for dinner with two-period selections of 18:00 and 19:30 hrs. The restaurant is located on the lobby floor of Siam Kempinski Hotel Bangkok.
